At its foundation is verjus: the pressed juice of early-harvested wine grapes. Picked at a moment when acidity is naturally vibrant and sugars remain low, the fruit captures the tension, brightness, and structure that fine sparkling wines are known for — without fermentation and without alcohol. This preserves the integrity of the grape while allowing purity of site and season to remain intact.
To build aromatic lift and layered complexity, we carefully infuse select botanicals and green tea. Elderflower brings delicate florals; juniper adds a subtle structural backbone; citrus peel enhances freshness and drive; and a whisper of cinnamon rounds the palate with gentle warmth. The green tea contributes texture and phenolic grip — that subtle tactile sensation wine lovers recognize and seek.
