2021 was a difficult vintage but the fruits of our labours shine through on this exceptional wine.

Nose: The bouquet is vibrant and expressive, leading with pronounced aromas of kirsch cherry, and layers of dried oregano and cracked black pepper add a savory and spicy dimension, while delicate undertones of forest floor and violets introduce an earthy and floral complexity.

Palate: On the palate, this Pinot Noir reveals a medium-plus weight with a smooth, velvety texture. The kirsch cherry flavors are front and center, delivering a juicy, luscious fruit character that’s both fresh and earthy. The dried oregano note brings a herbal flair, balancing the fruitiness with a savory edge. Cracked black pepper adds a gentle spice that complements the wine’s overall profile.

Finish: The tannins are well-integrated and provide a fine structure, while the balanced acidity ensures a lively, refreshing finish. This wine has a medium to long finish, with lingering notes of cherry and a subtle hint of dried herbs and pepper. The tannic structure is solid however, leading to an ability to age 6-8 years.

Pairing: Ideal for pairing with dishes such as roast duck, mushroom risotto, or grilled salmon, it’s a versatile wine that captures the essence of Pinot with a distinctive terroir from the Bock Vineyard in St Davids Bench.

As part of our continuing quest to bring you the best terroirs in Niagara, 2021 is the second vintage of Pinot Noir and we are starting to see a common thread with this vineyard that is distinctly Bock Vineyard, in the St. Davids Bench sub-appellation.

In 2021, the fall was cold and rain filled causing a great deal of grief for our winemaking team. Adversity and hard work however paid off with hand picking and sorting to only capture the best grapes into the bottle. Minimal whole cluster was used in concrete tanks due to disease pressure in the vineyard. The grapes proceed with a 4 day cold soak, after which a spontaneous fermentation took place. The skins were punched-down by hand twice a day for two and a half weeks. Once fermentation was complete, the wine remained on skins for a 5-day post-fermentation maceration before being pressed. The wine was transferred into French oak Barrels, and aged for 14 months.
