Yes, you read that right… beautiful, full-bodied, fully-ripe Cabernet Sauvignon from Grimsby in 2021! As the label says we truly never expected to bottle a varietal Cabernet Sauvignon. We are all fans of the grape but because it is so late ripening it can be difficult to produce in our cool climate. However, Grimsby and Winona continue to surprise us!
Nose: Big cassis, blackberry, blueberry and graphite really pop on the nose, with more subtle cured meat and leather notes appearing with a bit of air.
Palate:The palate is dense and powerful, continuing with the blackcurrant, blueberry and graphite theme, but adding sweet basil, peppercorn, mocha, vanilla and that great pancetta and leather background. The tannin is full but soft, the texture is mouth-filling and the length is legendary!
Finish: Give this wine lots of air if you want to enjoy now, or age for the next 10-12 years or longer for truly amazing depth and complexity.
