Our goal for our Sauvignon Blanc is to reflect the unique Niagara terroir and this wine always delivers. 2025 was a warm, sunny vintage, with beautiful cool nights, and a dry harvest characterized by average crop levels on the vines. On the nose, intense gooseberry is matched by pineapple, mango and passionfruit, with kiwi, lime and wet-stone more in the background. The palate is decidedly fuller than usual, with a creamy texture that frames, passionfruit and guava, followed by dragon-fruit, key-lime, lemongrass and oregano immediately behind. The finish is smooth and long, with notable flinty minerality appearing at the end. Drink now or over the next 3 years. Enjoy with pan-fried halibut, fresh pesto & anchovy-paste pasta, or lemon & herb roasted chicken.

Our 2025 Sauvignon Blanc was harvested on October 1, 2025, and gently pressed into a stainless-steel tank where it settled for two days before being racked off lees. We chose to inoculate with a selected yeast and fermented at a very cool temperature to preserve its freshness and beautiful aromatic. After fermentation, it was split into two different vessels for aging: a portion of wine was transferred into Acacia and neutral French oak puncheon, and the remaining wine stayed in stainless-steel on lees for 7 months. We bottled this wine in March 2026.
