Technical Details

The 2025 Riesling shows why we get so excited about Riesling from Niagara! The nose explodes with beautiful apricot-pith, peach-cobbler, lime-leaf, cardamom, and honey aromas. Those flavours continue on the palate while adding lemon-rind, honeycomb, elderflower and the distinctive stony minerality. This is a classically mid-weight Riesling but has lovely full texture, coming both from the vineyards and the lees aging. As the wine sweeps across the palate towards the finish, the balance of sweet and salty is sublime, with a bright green leafiness and flinty/minerally sensation appearing in waves, leading to an amazing, crunchy finish. The wine will age well for the next decade.

The growing season of 2025 was warm and dry with normal cropping levels, allowing the grapes to fully develop flavour while still maintaining exceptional acidity. The grapes come from two vineyards across Niagara. Hand-picked and hand-sorted, the grapes were picked at their ideal time. The Riesling was gently whole-cluster pressed, and juice was naturally settled. A long, slow, and cool fermentation took place at 13 oC in stainless steel tanks. After fermentation, the wine was aged on yeast lees in stainless steel tank for 7 months. The 2025 Riesling was bottled in May 2026.
