The goal with our Sauvignon Blanc is to reflect the uniqueness of Niagara terroir – this wine shows it in spades!

Nose: Very intense tropical aromas of pineapple, passionfruit, and mango lead to kiwi, lemongrass, and lime leaf on the nose.

Palate: The palate has bright acidity matched by a creamy texture, with key lime and starfruit battling with passionfruit for supremacy. Lemongrass and honeysuckle poke through in the background.

Finish: The finish is surprising, with the flintiest, “wet stones in a mountain stream” minerality ever seen in our Sauvignon Blanc. Drink now or in the next 3 years.

Pairing: Enjoy with pan-fried halibut, fresh pesto and anchovy paste pasta, or lemon & herb roasted chicken.

2022 was a warm, long, and relatively dry season characterized by small crop levels on the vines. This resulted with low volumes, but very intense wines with fantastic natural acidity.

Harvested on September 30th, the grapes were gently pressed in stainless steel tank and allowed to settle for 2 days before being racked off lees. After being inoculated with a selected yeast and fermented at a very cool temperature in order to preserve freshness and aromatics, the wine was split between 2 different vessels (neutral French oak barriques & stainless steel tank) to be aged on lees for 7 months. The 2022 Sauvignon Blanc was bottled in April 2022.

Very intense tropical aromas of guava, mango, and passionfruit play off kiwi, key lime, and sweet Thai basil. The palate has a bright acidity matched by a creamy texture with more kiwi, lime leaf, starfruit, and passionfruit being joined by lemongrass and elderflower. The long and intense finish departs on a pleasant & light flinty note, with hints of wet stone in a mountain stream. Drink now or in the next 3 years. Enjoy with pan-fried halibut, fresh pesto and anchovy paste pasta, or lemon & herb roasted chicken.

Winemaker’s Notes

2021 was a warm, long, and relatively dry season characterized by some rains at harvest. This resulted in amazingly ripe & complex wines with fantastic natural acidity.

Machine-harvested on September 25th, the grapes were gently pressed in stainless steel tank and allowed to settle for 2 days before being racked off lees. After being inoculated with a selected yeast and fermented at a very cool temperature in order to preserve freshness and aromatics, the wine was split between 3 different vessels (neutral 500L French oak barrel, 500L clay amphora & stainless steel tank) to be aged on lees for 7 months. The 2021 Sauvignon Blanc was bottled on June 27, 2022.

The palate has bright acidity matched by a creamy texture, with kiwi, key lime, and passionfruit complimented by lemongrass, elderflower, and mineral notes in the background. Given the warm vintage, the weight and lees-aging build an intense and long finish with a pleasant mineral note. Drink now or in the next 3 years. Enjoy with pan-fried halibut, fresh pesto and anchovy paste pasta, or lemon & herb roasted chicken.

Winemaker’s Notes

2020 was a year for the ages but brought about a vintage that will go down in history as one of the best. A warm vintage of cool evenings and warm days with great shoulder-seasons allowed for fruit to fully ripen while maintaining stunning natural acidity.
