Finish: Soft, creamy bubbles and a rich mouthfeel provided by the lees in-bottle are balanced by excellent acidity and freshness.

Harvested on October 5th, 2021, the grapes were gently pressed into stainless steel tank and allowed to settle for several days prior to being racked off heavy lees. Fermentation started shortly before the wine was racked off its gross lees. The 2021 Pétillant Naturel was bottled while fermenting to capture carbon dioxide in bottle.
