The 2021 Riesling shows why we get so excited about Riesling from Lincoln Lakeshore!

Nose: The nose explodes with beautiful lime-leaf, green apple, peach, cumin, and honeysuckle aromas.

Palate: Those flavours continue on the palate while adding honeycomb, cinnamon, white lilac and the distinctive stony minerality of the Lincoln Lakeshore. This is a classically mid-weight Riesling but has lovely full texture, coming both from the vineyard and the lees aging.

Finish: As the wine sweeps across the palate towards the finish, a bright green leafiness and flinty/minerally sensation appear in waves, leading to an amazing, crunchy finish. The wine will age well for the next decade.

The long and steady growing season of 2021 was truly ideal for Riesling, allowing the grapes to fully develop flavour while still maintaining exceptional acidity. Hand-picked and hand-sorted on October 17th, the grapes were picked at their ideal time. The Riesling was gently whole-cluster pressed, and juice was naturally settled. A long, slow, and cool fermentation took place at 12 oC in stainless steel tanks. After fermentation, the wine was aged on yeast lees in stainless steel tank for 9 months. The 2021 Riesling was bottled on August 8, 2022.

Palate: The nose continues on the palate while adding green apple, honeycomb, cumin, white lilac, and the distinctive chalky minerality of the Twenty Mile Bench.

Finish: As the wine sweeps across the palate towards the finish, a bright green leafiness and flinty gravel appear in waves, leading to an amazing, crunchy finish.

Pairing: With a hint of sweetness, Riesling is a great match to help tame down the heat in spicy dishes like Indian, Thai, or Mexican dishes.
