“Orange” wine (skin-fermented white) is an ancient technique for making wine, and we continue to experiment to explore its potential. This wine represents the evolving nature of wine in Niagara.

Nose: Orange marmalade, jalapeno pepper jelly, and passionfruit dominate the nose.

Palate: The palate reflects the nose with additional elderflower honey, cream, and lemon building on the palate with a rich & oily texture.

Finish: This wine is held together by bracing acidity, gorgeous texture, and a seam of fine tannin. Chill and drink as it warm to reveal new facets of its unique personality.

Pairing: This wine is stunning when paired with foods that play off the briny characteristics like oysters or anything grilled from the ocean.

“Orange” wine (skin-fermented white) is an ancient technique for making wine, and we continue to experiment to explore its potential.

Harvested on September 25th, the grapes were destemmed and placed into concrete tanks for fermentation. The wine remained on skins for 25 days after fermentation before being gently pressed into clay amphora (17%) and stainless steel tanks (83%). The 2021 Clockwork was racked only a handful of times before being bottled, unfiltered, on April 13, 2022.

“Orange” wine (skin-fermented white) is an ancient technique for making wine, and we continue to experiment to explore its potential.

Harvested on September 17th, the grapes were destemmed, fermented, and aged on skins for 25 days in clay amphora (40%) and stainless steel tank (60%). All the skins from fresh pressings were added to this wine for additional skin contact before being pressed on October 18, 2020 and allowed to settle in stainless steel tanks. The 2020 Clockwork was racked 3 times, with a single sulphur addition, before being bottled, unfined & unfiltered.

Harvested on October 10th, the grapes were destemmed, fermented, and aged on skins for 72 days in clay amphora (42%) and stainless steel tank (58%).  The wine was pressed on December 12, 2019, and allowed to settle in stainless steel tanks. The 2019 Clockwork was racked 3 times, with a single sulphur addition, before being bottled, unfined & unfiltered, on April 15, 2020.
