Nose: The aromatics jump out of the glass with lemon curd, pineapple, and fruit blossoms leading the way, supported by sea salt, spice, white pepper, and rich saltwater toffee and toasted almond.
Palate: Further demonstrating the complexity hinted at on the nose, there is a layered richness, but restraint, focus, and minerality are present. Miso crème brulee with sea salt caramel, hints of vanilla, and warm ripe fruits mix with “mountain stream” minerality.
Finish: The finish goes on and on, proving this to be a stunning example of the estate Senchuk Vineyard.
Pairing: Umami-rich dishes such as grilled, seared or roast shellfish like lobster and scallops, roast, guinea fowl, dishes that include wild mushrooms and slow roast tomatoes, white truffles. Hazelnut-crusted chicken or fish.
