Nose: Lovely aromas of wild blueberries, leather, and moss
Palate: The palate takes you on a journey down the forest path by a lake in the Canadian Shield on a cool autumn evening, stopping to pick some wild-blueberries and noticing a light background of freshly caught wild-turkey being roasted over an open fire.
Finish: A long lingering finish with bright acidity makes this a truly enjoyable wine.
Pairing: Pairs well with roast lamb and turkey sausages over a charcoal grill.
Harvested in October 2019 the grapes were destemmed and placed in a small tank for fermentation. After two days of stirring the primary fermentation started spontaneously with natural malolactic occurring at the same time. It was punched-down by hand twice a day during the peak of fermentation. The Merlot remained on skins for 27 days, and then was pressed into stainless steel tank. After settling for 4 days, it was racked into 2 neutral barrels. It was taken out of barrel after 12 months and left to settle in stainless steel tanks, then racked the day before being bottled with no additions of any kind.

A truly deep and fascinating wine is reminiscent of walking through the mossy dampness of a lakeside forest path in the Canadian Shield on a cool autumn evening, stopping to pick some wild blueberries and noticing a light background of freshly caught wild turkey being roasted over an open fire.
Winemaker’s Notes
Harvested on October 17th, 2018, the grapes were destemmed and placed into small tanks for fermentation. After 2 days of stirring, primary fermentation was started with natural malolactic fermentation happening simultaneously. The skins were punched down by hand 2x per day throughout the peak of the fermentation process. The wine remained on skins for 27 days after fermentation before being pressed into stainless steel tanks and allowed to settle for 4 days. The wine was racked to 2 neutral barrels for 12 months before being left to settle in stainless steel tanks. Racked the day prior, the 2018 Merlot – Vin Natur was bottled on May 12, 2020, with no additives.
