Tasting Notes
Vintages like this one really epitomize what Ontario Chardonnay is all about! The nose bursts with lemon curd, pear, green apple, peach, and freshly baked bread. Mineral and wet stone dominate the palate, with cream, honeydew, and almond in the background. Tied together by a bracing, crisp acidity, this wine will age nicely for the next 5-8 years. Enjoy with brie, sole meunière, or lemon roasted chicken.
Winemaker’s Notes
Harvested on October 4th, 10th & 18th from 3 different vineyards, the grapes were gently pressed, and the juice was naturally settled for a few days prior to fermentation: most of the wine was fermented in concrete tanks, and the remainder being fermented in 228L barriques, 500L puncheon, and stainless steel. All the wine was aged on full lees for 9 months in both concrete and stainless steel tanks following fermentation. The 2019 Chardonnay – The Fifty was racked, lightly filtered, then bottled on August 25, 2020.
