A beautifully warm 2020 vintage that cooled perfectly at harvest created wines that are both full-flavoured and balanced by fresh acidity – this Chardonnay is no exception.

Nose: The nose of this wine is full of floral fruit blossoms, pineapple, and peach followed up with lemon meringue and crème fraiche.

Palate: The palate has a refreshing reflection of the nose with lemon tart and tropical fruit notes, but it also showcases a minerality, and wet stone characteristic.

Finish: This wine has an elegant finish. This wine will age well for the next 5-8 years

Pairing: Enjoy with brie, sole meunière, or lemon roasted chicken.

The 2021 The Fifty Chardonnay is a blend of two different vineyards. This vintage brought a lot of rain which provided us with large yielding but created some challenges when it came to ripening in the vineyards.

After a gentle press and a few days to settle, 80% of this wine was fermented in concrete and the remaining 20% was fermented in stainless steel. Once fermentation was completed, all the wine was aged on full lees in concrete, stainless steel and neutral oak barrels for 8 months. After lees-aging, it was racked, lightly filtered, and bottled on September 19th, 2022.

Tasting Notes

A beautifully warm 2020 vintage that cooled perfectly at harvest created wines that are both full-flavoured and balanced by fresh acidity – this Chardonnay is no exception. A nose of peach, pear, and honeydew melon is immediately subsumed by lemon meringue, crème fraiche, and graham cracker. The palate drives forward lemon curd, honeysuckle, and hazelnut with a slightly flinty, wet stone background that leads to an unusually rich and weighty mid-palate. Lovely sweeping acidity brings the wine around to an incredibly long, complex finish. This wine will age for the next 5-8 years. Enjoy with brie, sole meunière, or lemon roasted chicken.

Winemaker’s Notes

Harvested on September 11th, 24th & October 6th from 3 different vineyards, the grapes were gently pressed, and the juice was naturally settled for a few days prior to fermentation: most of the wine was fermented in concrete tanks, and the remainder being fermented in 228L barriques, 500L puncheon, and stainless steel. All the wine was aged on full lees for 9 months in both concrete and stainless steel tanks following fermentation. The 2020 “The Fifty” Chardonnay was racked, lightly filtered, then bottled on August 15, 2021.

Tasting Notes

Vintages like this one really epitomize what Ontario Chardonnay is all about! The nose bursts with lemon curd, pear, green apple, peach, and freshly baked bread. Mineral and wet stone dominate the palate, with cream, honeydew, and almond in the background. Tied together by a bracing, crisp acidity, this wine will age nicely for the next 5-8 years. Enjoy with brie, sole meunière, or lemon roasted chicken.

All the wine was aged on full lees for 9 months in both concrete and stainless steel tanks following fermentation. The 2019 Chardonnay – The Fifty was racked, lightly filtered, then bottled on August 25, 2020.
