Tasting Notes

Serve well chilled, pouring immediately.

Nose:On the nose, very perfumy and fruit forward with rasperry and hibiscus leaping out of the light mousse of bubbles.

Palate:On the palate, more raspberry, pomegranite with a long crisp finish.

Finish: The texture, length, and dryness are exceptional, creating the most wine-like beverage you will taste in the non-alcoholic world.

Pairing: Pair this wine witha night of pizza and friends, fresh salad or a night of a selection of cheeses and charcuterie.  

Beverage Making Notes

Serve well chilled, pouring immediately.

Our goal was to recreate the experience of a Niagara Sparkling Riesling, using local, craft, non-alcoholic ingredients.  We picked Riesling from Niagara very early and pressed it to make our Verjus (literally translated as “Green Juice”).  We then made a small batch infusion with green tea, fruits and botanicals. These were mixed together, and bottled with a light, sparkly fizz.

Ingredients:

50% Riesling Verjus (Riesling Juice picked at 14 Brix) 50% Infusion containing green tea, hibiscus, raspberry puree and pomegranite seeds Alcohol 0.0% - Never Fermented! 30 Calories per glass (125mL)- Low Sugar!
