WOW.. what can we say? ? Especially in such a tough vintage, this is truly classic expression of our Senchuk Chardonnay and hands-down our best Chardonnay of 2021. It is both powerful and delicate in equal measure

Nose: Classic, reductive aromas of wet-stone and lemon-curd lead to unfolding pineapple and apple blossoms, followed by salted-caramel, toasted almond, spice and honeysuckle. Once it opens up, there is a richness to the nose, however there is also restraint, focus and minerality.

Palate:The palate demonstrates the complexity that is hinted at on the nose, with lemon tart, peach and pineapple followed closely by hazelnut, crème brulee, sea salt, hints of crème-fraiche, and cardamum, all mixed together with “water over a mountain stream” level minerality!

Finish: The finish just goes on and on showing why this is a truly outstanding example of Senchuk Vineyard!

Pairing: Umami-rich dishes such as grilled, seared or roast shellfish like lobster and scallops, roast, guinea fowl, dishes that include wild mushrooms and slow roast tomatoes, white truffles. Hazelnut-crusted chicken or fish.

2021 was a challenging vintage, with heat spikes and heavy rain events throughout harvest. However, the amazing terroir on our property, and some excellent vineyard management meant that the cleanest, best tasting, most intense grapes came from our farm! Harvested on September 18th, both clones were hand-picked, hand-sorted and gently whole cluster pressed into separate tanks for cold settling. After two days, each clone was racked into puncheons and barriques for fermentation and aging. Spontaneous alcoholic and malolactic fermentation took place, and once they were complete, we left the wine to rest in barrel for 17 months.
