Winemaking Notes
As part of our continuing quest to bring the best terroirs of Niagara to all of you, this is our first vintage of Chardonnay from Grimsby Hillside Vineyard. Located only 800 metres from Leaning Post, its terroir is nonetheless very different from our own. This vineyard is perfectly suited to Chardonnay and combined with mature (18 year-old) vines creates wines of elegance, power and age worthiness.
A very cool spring was followed by a steady and cool growing season with just enough moisture to keep vines happy. The cool and steady weather continued into the autumn, allowing us to hang fruit well into the season without losing acidity or freshness. The fruit was amazingly clean, full-flavoured and high in acid with almost no sorting required. The grapes were whole-cluster pressed on October 21st 2019. Juice was naturally settled, then racked into barrel where fermentation occurred by indigenous yeast and malolactic bacteria. Once fermentations were completed, the wine remained in French oak barrique and 500-Litre pucheon without stirring of the lees for 15 months. This wine was lightly filtered and bottled on May 13th, 2021.
Tasting Notes
An amazing growing season has given us a stunning debut for this vineyard! Exceptionally tightly wound, the bright lemon curd is balanced perfectly with wet-stone, gunflint and wisps of wintergreen in the background. With more air some green apple, pineapple, crème-fraiche and roasted almond do start to appear, but the fantastic notion of a cold mountain stream trickling over limestones never fades. The palate is perfectly balanced showing good weight and structure which is almost immediately washed away with laser-like acidity. The finish is exceptionally complex and long, fading very slowly. Truly unique!

Shiping
When it comes to shipping, our goal is to find the fastest and most reliable shipping option available to us. During the Covid pandemic, we have made significant changes with our delivery partners to serve you better.
For Toronto deliveries we primarily use Fil Delivery. They have been tremendous and we have had glowing reviews from customers. They update you on the expected delivery time throughout the day to ensure satisfaction. Deliveries leave the winery Mondays and Thursdays for delivery Tuesdays and Fridays.
For deliveries to Hamilton, Burlington and Niagara, winery staff often deliver same day or next. We aim to please as often as possible!
ICS is also used for Major Centers other than Toronto and local. Their delivery times are typically next day from pick up at the winery on Tuesdays and Thursdays.
Out of province and small-town Ontario deliveries are packaged appropriately with slow-release heat packs in winter reduce breakage and freezing through CanPar. We review shipping daily to identify issues before they arise. We do our best to help communicate any issues in advance to get the wine to you as quickly as possible.
