Winemaking Notes
The 2018 vintage was a warm season which allowed us to pick on September 18. The grapes were gently whole cluster pressed (separated by Clone), allowed to settle in chilled tanks over night. The juice was then racked into barrels; Clone 96- five barriques, where the juice underwent spontaneous alcoholic and malolactic fermentation. Three barriques were skillfully blended into the Senchuk Vineyard Chardonnay, which left two neutral barriques (3+ yr old barrels) that melded beautiful together, Clone 96. We aged this chardonnay in barrel on lees without stirring for 16 Months. It was bottled in March 2020.
Tasting Notes
The Clone 96 showcases the beautiful characteristics of one clone from one vineyard. This wine has incredible depth on the nose that slowly evolves, keeping an interest in seeing what else will appear. The nose encompasses grilled lemons and toasted almonds with a sprinkling of sea salt. The palate compliments the nose but enhances that experience of this wine. With a rich and creamy texture followed by a delightful saline quality, this wine has that perfect balance of richness and brightness. The wet stone/mineral base is surrounded by delectable lemon curd and baking spices such as cardamom and cinnamon. This wine will age well over the next 8+ years. Drink with roasted turkey, hazelnut crusted halibut, and soft white cheeses. Cheers!
