The grapes were hand-picked and hand-sorted on October 24th, destemmed and left to cold soak on skins prior to fermentation. The fermentation started spontaneously in small open-top fermenters with the skins being punched-down by hand 2 times per day. Once fermentation was finished, the wine remained on skins for 10 days before being gently pressed. It was then transferred to French and American oak barrels (40% new) and aged for 20 months. The 2017 Cabernet Franc was bottled on September 18, 2019.
The 2017 vintage started with rain for days all through the spring months, and it was hard to tell if this rain would continue through the harvest. Lucky for us the rain subsides and turned into a warm and long summer/fall season giving the Cabernet Franc a long time to ripen. The nose is full of plump ripe raspberry, blackberry and cherry with anise and slight cocoa notes. The perfume is elegant, bold and full of life. The palate, oh the palate, what can we say? The richness, and round big tannins have control and structure of the wine. The combination of red fruits, flavourful spices wrapped in velvet leather notes gives this wine a new meaning to Niagara Cabernet Franc. Feel free to age this full-bodied beauty for the next 8-10 years. If you drink it now, try it with hard cheeses like a well aged Cheddar, Parmigiano Reggiano, and Pecorino Romano or with roasted red meat.
