Nose: A very complex nose is reminiscent of walking through a garden full of ripe tomatoes planted next to thyme and oregano surrounded by wild strawberry and raspberry.
Palate: The palate shows a wonderful softness and suppleness with wild blueberry and mulberry layered over autumnal leaves, sweet tobacco, cured meat, green olive, and freshly turned soil.
Finish: A brambly wildness certainly comes through, however, the charm persists throughout, with acidity balanced by smooth tannins leading to a long, complex finish.
Pairing: This wine pairs well with chorizo dishes and grilled kebab.
Hand-picked and hand-sorted, the grapes were destemmed and left to cold soak on skins for 2 days prior to fermentation. Fermentation was started in clay amphora with no added sulphites. The skins were punched down by hand 2x per day for 4 weeks. The wine remained on skins for 4 weeks after fermentation before being gently pressed. After being transferred back to clay amphora to be aged for 10 months, the wine was transferred to tank. Following a single racking in tank, the 2021 Wild (A)mphora (F)ranc was bottled – without fining, filtration, or added sulphites – on September 10, 2022.
